Sausage and Veggies Sheet Pan Dinner
This easy one pan meal, that is so simple to make, sausage and veggies with potato, makes the perfect meal with side dishes and gravy for a week night dinner or supper. Healthy Oven Baked food to serve a family of four that tastes great with some gravy over rice. Any type of sausage may be used as well as boerewors. Add your vegetables that you have in the kitchen or what is in season.

What is the best part of a sheet pan dinner?
Its very simple and easy to make a meal all in one. Baked in the oven with meats or sausages and veggies plus potato. Similar to roasted veggies. Less dishes to clean and use, as well as healthy. Great to put dinner on for working and busy moms for the family and just let it cook for a short time. Veggies could be cut and made ahead of the meal making it easier to prepare.
What is the difference between a sheet pan and a baking tray?
Sheet pan are normally quit shallow with a small edge. Deep enough to bake or roast some veggies in without any sauces or liquid. If you need to bake a dish in the oven with more ingredients that will make fat or juice use a baking pan with higher sides. Even add the ingredients to a casserole dish so you can be certain that the liquid will not spill over in the oven. Yes the sheet pan edges are lower than the baking tray or roasting pan.
Ingredients
- package kielbasa (Or your preferred type of sausage or boerewors)
- diced sweet potatoes (2 medium sweet potatoes)
- Brussel sprouts, halved
- olive oil, divided
- balsamic vinegar
- fresh thyme
- Salt and pepper to taste
How To
Spray a baking sheet with cooking spray and set aside. Preheat the oven.
Place diced sweet potatoes in a small bowl.
Drizzle with 1 Tbsp olive oil, fresh minced thyme and salt and pepper to taste. Toss to coat.
Pour out onto one side of your sheet pan.
Place halved brussel sprouts into a small bowl. Drizzle with 1 Tbsp olive oil, balsamic vinegar and salt and pepper to taste. Toss to coat. Pour onto the other side of your baking sheet.
Bake for 30 minutes.
Meanwhile, slice the sausage into smaller pieces. Halfway through the baking time (15 minutes), remove the sheet pan from the oven and place the sausage on top of the veggies.
Continue to bake for another 15 minutes.
Serve with rice and make a gravy or a sauce to add to the healthy veggie meal. Great to make this very simple all in one sheet pan dish with potato and veggies with sausage of choice. Oven baked or roasted for an easy week night meal or any lunch for the family anytime. Serves four.

- 1 x 14 oz (400 g) package kielbasa (Or your preferred type of sausage)

3. Place halved brussel sprouts into a small bowl. Drizzle with 1 Tbsp olive oil, balsamic vinegar and salt and pepper to taste. Toss to coat. Pour onto the other side of your baking sheet.
4. Bake for 30 minutes.
5. Meanwhile, slice the sausage into smaller pieces. Halfway through the baking time (15 minutes), remove the sheet pan from the oven and place the sausage on top of the veggies. Continue to bake for another 15 minutes.
6. Remove the pan, serve and enjoy!
