Ingredients

  1. 500 grams of onion, mustard sausage (boerewors)
  2. 2 medium potatoes (of choice)
  3. 1 cup of frozen mixed veggies of peas and carrots
  4. 1 red onion
  5. salt and pepper and garlic
  6. olive oil

Instructions

  1. Preheat the oven to 200 deg, C (400 deg. F)
  2. Peel and slice the potato into slices, so they can cook easily and quickly. About 1 cm thick. Wash and put aside.
  3. Slice half the red onion in slices and the other half in chopped pieces to cook with the veggies.
  4. Sprinkle some olive oil on a sheet pan so the potatoes do not stick.
  5. Add your sausage to the sheet pan in the center, place the potatoes around the sausage. Turn the potatoes over so that both sides are covered in the olive oil. Then spread out the frozen veggies where there is space.
  6. Spice with salt and pepper and some garlic.
  7. Place this sheet pan of sausage and veggies in the oven to roast for about 30 minutes.
  8. Turn the sausage and potato over half way to cook and brown evenly. Then also poke the sausage so that it releases the mustard onion flavors to be absorbed by the potatoes. Continue roasting.
  9. When the potatoes are tender when checked with a fork, then they are done. The sausage should be nicely golden as well.
  10. Remove from the stove, and serve in two plates for a delicious flavorful dinner for two.
  11. You can add a salad for another side dish.

Notes

  • Any vegetables in season can be used.
  • cut the veggies in smaller pieces, quicker to cook
  • be aware of the time some veggies need to be cooked and add them in stages to the pan.
