In this recipe we rubbed salt and pepper on the chicken and then we applied the honey mustard mixture all over the chicken. As it was not used for a marinate but to flavor the chicken pieces that were baked in the oven for a delicious meal. But mustard is applied to meats firstly to make the spice rub stick to the meats, and it makes the meat more tender and add so much flavor.
Why do people marinate their chicken in mustard?
You can marinate or just bake your chicken in mustard with honey as it will add some tang and texture to the chicken. Where as honey just balances the tang of the mustard and does not make the marinade or sauce to sweet.
Do you bake chicken covered or not?
When using chicken pieces that are smaller there is no need to cover the chicken when baked in the oven with sauce. But if you are baking or roasting a larger whole chicken you can cover with foil for the chicken to be cooked evenly and thoroughly. Taking it off to brown before totally done.

For the glaze: we mixed honey and Dijon mustard.
Mustard: You can substitute Dijon mustard for the grain mustard.
Honey: But honey is preferable with a neutral flavor (herbal). Fresh garlic and aromatic spices are added to the glaze.
