Ingredients

  1. 850 grams of orange sweet potatoes 
  2. 1/4 cup brown sugar
  3.  2 Tablespoons maple syrup
  4. 3 Tablespoons unsalted butter, softened or melted
  5. 1 teaspoon salt
  6. 1 teaspoon ground cinnamon
  7. 1 teaspoon nutmeg
  8. 1/2 teaspoon vanilla extract
  9. 1/2 cup chopped pecans
  10. 1 ½ c mini marshmallows

Instructions

1.     Heat oven to 190 Deg. C (375 Deg. F.) Grease the inside of an 8×8-inch baking dish with non stick cooking spray or butter.

2.    Peel the sweet potatoes and cook the sweet potato until tender in a pot of water. Place in a large bowl and mash them up.

3.     Add brown sugar, syrup butter, salt, cinnamon, nutmeg and vanilla extract. Mixing well to make sure all has been incorporated.

4.     Spread mixture into an even layer in the prepared baking dish. Sprinkle with crushed or broken pecans and top with marshmallows.

5.     Bake for 20 minutes or until marshmallows are toasted. Remove pan from oven and serve while warm.
