How long will homemade bacon jam keep?
As long as you store the bacon jam or relish, chutney in a clean sealed container, it will keep in the fridge for up to 2 – 4 weeks. The opened up jars or containers will have to get eaten up sooner.

Why is my bacon jam not thickening?
You would need to cook the jam mixture with the lid off and keep on cooking slowly until the liquid is reduced. The liquid need to evaporate and thicken and you would just need to keep it cooking until it is a good consistency.
Ingredients
- bacon, cut into small bits
- onions, cut very thin and finely
- brown sugar
- crushed garlic cloves
- cayenne pepper
- cinnamon
- nutmeg (optional)
- apple cider vinegar
- maple syrup or honey
- coffee
- Tomato sauce

How To
After you have chopped the bacon in smallish bits and chopped the onions and crushed the garlic cloves. Gotten all the other ingredients ready and prepared. Fry the bacon in a pan until done and drain, set aside.
Keep the bacon drippings to fry the onions and crushed garlic.
Then add the brown sugar and stir until it has thickened. Adding the nutmeg, cinnamon and cayenne pepper, stir in well.
Before you bring the mixture up to simmer, add the apple cider vinegar and maple syrup, coffee, that will add plenty of flavor and sweeten this tasty savory chutney, relish or jam. Bring the mixture to a lower temperature to have the liquid reduced. Add in the bacon bits, stir it up.
Place it in a blender to break up the bits better to resemble jam. Or leave it as it is, totally up to your preference and it depend what you are using it on as a topping or adding flavors in other recipes.
Finally adding the tomato sauce, and stirring well, then leaving it to cool or bottle warm.

Ingredients
- Pack of bacon, cut into pieces 200g
- 2 onions, cut very thin
- 1 Tablespoon of brown sugar
- 2 or 3 crushed garlic cloves
- 1 teaspoon cayenne peppers
- ½ teaspoon cinnamon
- ½ teaspoon nutmeg (optional)
- 3 Tablespoon apple cider vinegar
- 2 Tablespoon maple syrup or honey
- 1 1/2 cups of strong coffee liquid
- 1/3 cup Tomato sauce
Instructions
- Fry bacon strips that are cut into bits in a large non stick pan over medium-high heat for about 10 minutes.
- Drain on paper towel.
- Keep bacon drippings and fry onions and garlic form a tastier result.
- Add in the brown sugar and cook until sticky, or thickened, about 5 min.
- Add in cayenne pepper, cinnamon, and nutmeg. Cook and stir.
- Mix in vinegar, and maple syrup and coffee mixture.
- Bring to a simmer, reduce heat to low, and cook until the bacon jam has reduced its liquid and is thickened but not completely dry, stirring occasionally to prevent burning, about 35 minutes.
- Mix in tomato sauce and cook 5 more minutes.
- Remove from heat, let the bacon jam cool. Blend the bacon mixture to get finer pieces that will resemble jam. Place in clean bottles, to serve and use.
- Bacon jam will store sealed in a container or bottle in the refrigerator, up to 2 weeks.
