Ingredients

Pack of bacon, cut into pieces 200g
2 onions, cut very thin
1 Tablespoon of brown sugar
2 or 3 crushed garlic cloves
1 teaspoon cayenne peppers
½ teaspoon cinnamon
½ teaspoon nutmeg (optional)
3 Tablespoon apple cider vinegar
2 Tablespoon maple syrup or honey
1 1/2 cups of strong coffee liquid
1/3 cup Tomato sauce
Instructions
Fry bacon strips that are cut into bits in a large non stick pan over medium-high heat for about 10 minutes.
Drain on paper towel.
Keep bacon drippings and fry onions and garlic form a tastier result.
Add in the brown sugar and cook until sticky, or thickened, about 5 min.
Add in cayenne pepper, cinnamon, and nutmeg. Cook and stir.
Mix in vinegar, and maple syrup and coffee mixture.
Bring to a simmer, reduce heat to low, and cook until the bacon jam has reduced its liquid and is thickened but not completely dry, stirring occasionally to prevent burning, about 35 minutes.
Mix in tomato sauce and cook 5 more minutes.
Remove from heat, let the bacon jam cool. Blend the bacon mixture to get finer pieces that will resemble jam. Place in clean bottles, to serve and use.
Bacon jam will store sealed in a container or bottle in the refrigerator, up to 2 weeks.
