1. Heat 1 Tbsp of the olive oil in a skillet over medium high heat.
2. Add in the shrimp, and season with the chili powder, cumin and salt and pepper to taste.
3. Squeeze in the juice from ½ a lime.
4. Sauté the shrimp until cooked through. Remove and keep warm.
5. Reduce the heat to medium, and add the remaining olive oil to the skillet.
6. Add the onion and jalapeno to the skillet, and saute until softened.
7. Place 1 tortilla to a skillet over medium heat, and spread ½ the shrimp on it.
8. Add ½ the vegetable mix, avocado and white american cheese to the tortilla.
9. Cover with another tortilla, and saute until the tortilla on the bottom is browned and crispy.
10. Carefully flip the quesadilla over and brown on the other side.
11. Remove the quesadilla and cut into fourths.
12. Repeat steps 7-11 to create another quesadilla.
13. Serve with your choice of toppings.
