The best South African tasty syrupy koeksisters recipe idea to create for a dessert or snack. They are a no bake recipe and are fried in oil on top of the stove in a pot. The sugar syrup is made the day before and cooled in the fridge overnight. No yeast is used in this easy recipe koeksister dough.
For when you fry the plaited dough, you dip the hot koeksister in the cold syrup and it sucks it up. In that way it is filled with amazing tasty syrup. Cool the koeksisters and keep in the fridge as long as they last. Totally freezable and a great make ahead recipe to keep.

Why are my Koeksisters dry?
The trick is to make sure you chill your syrup overnight or until very chilled. As if the syrup is not cold the dough will not soak it up. Ending in a dry koeksister.
How do you defrost koeksisters?
Take them out and leave them overnight to defrost. You could warm them up in the microwave for 10 – 15 seconds until slightly warm.

You make the syrup first and cool it over night. The next day mix the dough and cut it into strips and plait the dough strips. Put aside and heat up the oil to fry them in. They will turn over once one side is cooked. As they come out of the hot oil you will dip them into cold syrup and then store them in fridge for serving.
How long can you keep koeksisters in the fridge?
The syrup may be kept for about 2 weeks in the fridge in a sealed container, or for the next batch. Or freeze the syrup for about 3 months or more. (as its made of sugar)
The dough can also be made ahead by a day or two and kept in the fridge for plaiting.
The cooked koeksister will keep in the fridge for about a week, covered so they don’t dry out. The cooked and dunked koeksisters will be good in the fridge for up to a week. Turn them now and again to make sure the syrup is always soaking up in the koeksisters.

Ingredients
The Syrup
1. 6 Cups of white sugar (6x250 ml)
2. 3 Cups of water (3 x 250 ml)
3. 2ml of Cream of Tartar
4. 4 cinnamon sticks
koeksisters Ingredients
1. 4 Cups of flour
2. 3 tsp of baking powder (15ml)
3. 1/2 tsp of salt
4. 2 Tbsp of butter (30 ml)
5. 2 eggs
6. 1 Tbsp of sugar (15 ml )
7. 1 Cup Water (250 ml)
8. oil for frying.(deep fry)
Instructions
First make the syrup (the syrup must be chilled in the fridge before you make the koeksister)
How to make the syrup.
- Boil al the syrup ingredients together, stirring now and again in the beginning. Until all the sugar has been dissolved. Boil for 15 minutes.
- Then cool before chilling in the refrigerator.(the syrup can be stored in the fridge for about 2 weeks. In a sealed container.)
Make the koeksisters.
- Sift the flour baking powder and the salt.
- Rub in the butter.
- Beat the eggs sugar and the water together.
- Add this to the flour mixture and knead together very well until smooth and shiny. Allow to rest in the fridge for a few hours.(may be made the day before)
- Then roll out dough thinly and cut into strips and make them about 3-4 inches long and plait.
- Heat the oil and fry the koeksister in deep oil turning when brown. Then plunge them in cold syrup.
- The hot koeksister will such up the syrup. Then lay them in a dish to cool.
- Then place them in a refrigerator to cool.
- Serve them on plates and enjoy the syrupy koeksister.

Make these ingredients a day before or a good few hours before frying the koeksisters. The time allowed to prepare the syrup and let dough chill for recipe is not included in the preparation or cooking time.
