These oat or as we say in South Africa, Jungle oats crunchies are the best snack to make and keep. Healthy and filling baked with good organic rolled oats and honey with brown sugar or stevia mix.
Made in a large batch and cut into squares to pack into sealed containers to store for the kids. They are quick and easy to prepare and pressed into a baking tray to bake. Serves as a healthy snack for travel during the holidays and summer breaks.
Can you make crunchies without coconut?
Yes, you can. Replace some roasted sesame seeds for the desiccated coconut if preferred. Sesame seeds would give this a nutty flavor when added to the oat crunchie biscuits or snack bars. These would make a totally different recipe, as coconut is the preferred ingredient.
How do you make Illovo syrup crunchies?
It is very simple to replace the honey with the Illovo syrup. The consistency is the same and not to runny. Only the health aspect is different as honey is organic and healthier and provides many benefits. The traditional south african oat crunchy recipe is with syrup, but in this recipe honey was used for a replacement and it was a very tasty recipe.

How To
Preparing this mixture to bake is simple and easy. All you do is melt the butter then add this and the honey to all the dry ingredients and mix together. Press into a baking tray and bake. Really very easy.
Once they are baked cut while warm into squares. (NB cut while warm, but leave to cool)
Then when they are cool and hardened break them apart store in a sealed container.
These crunchies bring back so many memories from childhood. We used to travel to the coast for holidays and of course our father would not stop to eat or drink. Therefore my mother used to make large quantities of these crunchie squares for the trip to nibble on. Also a great snack for holidays for the kids and healthy and very filling. So popular with many people.
They are a versatile snack and you can add chocolate chips or dip them in chocolate.
But plain is still the best.

Ingredients
- 2 cups of oats (jungle oats)
- 1 cup of flour
- 1 cup of brown sugar
- 1 cup of desiccated coconut
- 1/2 cup of butter
- 1/2 teaspoon of bicarb of soda
- 2 tablespoons of Honey. (or illovo syrup optional)
- 1/4 teaspoon of salt
Instructions
- Preheat Oven to 180 Deg. C (350 Deg. F)
- Grease baking tray or roasting pan or line with wax proof paper or liner.
- Melt the butter in a bowl.
- In a larger bowl mix the dry ingredient such as oats, flour, sugar, coconut, bicarb soda.
- Add the melted butter and the honey and mix all the ingredients together until well mixed.
- Press and level oat this oat mixture into a baking pan with some sides. (or roasting pan)
- Place in the preheated oven and bake until brown on top. For about 30 minutes
- When cooked take out and place on a cooler rack and cut the oat crunchies in squares while it is warm. Leaving the crunchies to cool before taking out of the pan. As they will set harder then this will be difficult.
- When cool place in containers and keep sealed for at least 3 days. They do last longer if wrapped with foil wrap. Great snacks to take on journeys or made in quantity.
Notes
These oat crunchies may be made into biscuits as well.
Use some syrup as a alternative to honey.
