These crunchie bars or cookies can be enjoyed crunchy or chewy biscuit. These oat or as we say in South Africa, Jungle oats crunchies are the best snack to make and keep. Healthy and filling baked with good organic rolled oats and honey with brown sugar. Made in a large batch and cut into squares to pack into sealed containers to store for the kids. They are quick and easy to prepare and pressed into a baking tray to bake. Serves as a healthy snack for travel during the holidays and summer breaks.
Can you make crunchies without coconut?
Yes, you can. Replace some roasted sesame seeds for the desiccated coconut if preferred. Sesame seeds would give this a nutty flavor when added to the oat crunchie biscuits or snack bars. These would make a totally different recipe, as coconut is the preferred ingredient.
How do you make Illovo syrup crunchies?
It is very simple to replace the honey with the Illovo syrup. The consistency is the same and not to runny. Only the health aspect is different as honey is organic and healthier and provides many benefits. The traditional south african oat crunchy recipe is with syrup, but in this recipe honey was used for a replacement and it was a very tasty recipe.
Ingredients
- Rolled oats: Known as old fashioned oats, derived from whole grain food from oat groats, that are dehusked then steamed and rolled. The rolled oats are then lightly toasted to stabilize them.
- Desiccated coconut: Is derived from coconut meat, grated then dried and used for baking. It has a fresh coconut flavor and is crispy, The color is white or cream.
- Honey: Is a healthy and organic natural liquid made by bees. It is golden in color and can vary in tastes, or color. Depending on what flowers herbs or blossoms were available for the bees to forage on.
- Flour: All purpose flour is a versatile flour that is used for all baked goods. Sauces and for thickeners for gravies. Made from a blend of hard and soft wheat. You could also use Almond flour, oat flour, Rye flour, chickpea flour, coconut flours.
- Sugar: Use brown or white sugars for baking. If you want a healthier version then use coconut sugars, or use substitutes such as aspartame, stevia.
- Butter: Butter is a dairy product made from dairy cream, that has been churned. It has fats and liquids. Which help the moisture content of your baked desserts and cakes or casserole dishes for meals. You get the salted or unsalted butter. Depends on the recipe used which one you should use.
- Salt: Salt is a mineral which is essential for life. Used in baking and cooking of meals. Salt flavors food and is a binder and a great food preservative. the healthiest salts is Sea salt, Himalayan salt, and Kosher salt.

Once they are baked cut while warm into squares. (NB cut while warm, but leave to cool)
Then when they are cool and hardened break them apart store in a sealed container.

These crunchies bring back so many memories from childhood. We used to travel to the coast for holidays and of course our father would not stop to eat or drink. Therefore my mother used to make large quantities of these crunchie squares for the trip to nibble on. Also a great snack for holidays for the kids and healthy and very filling. Ingredients
- 2 cups of rolled oats (jungle oats)
- 1 cup of flour
- 1 cup of brown sugar
- 1 cup of desiccated coconut
- 1/2 cup of butter
- 1/2 teaspoon of bicarb of soda
- 2 tablespoons of Honey. (or illovo syrup optional)
- 1/4 teaspoon of salt
Instructions
- Preheat Oven to 180 Deg. C (350 Deg. F)
- Grease baking tray or roasting pan or line with wax proof paper or liner.
- Melt the butter in a bowl.
- In a larger bowl mix the dry ingredient such as oats, flour, sugar, coconut, bicarb soda.
- Add the melted butter and the honey and mix all the ingredients together until well mixed.
- Press and level oat this oat mixture into a baking pan with some sides. (or roasting pan)
- Place in the preheated oven and bake until brown on top. For about 30 minutes
- When cooked take out and place on a cooler rack and cut the oat crunchies in squares while it is warm. Leaving the crunchies to cool before taking out of the pan. As they will set harder then this will be difficult.
- When cool place in containers and keep sealed for at least 3 days. They do last longer if wrapped with foil wrap. Great snacks to take on journeys or made in quantity.
Notes
- These oat crunchies may be made into biscuits as well.
- Use some illovo syrup as a alternative to honey. maple syrup is to runny, its not the same consistency.
