Toast Fried Egg Bacon and Arugula recipe idea for a breakfast or brunch meal. An easy no bake stove top recipe to make for two. Simple and a very quick meal to fry for the mornings or on the weekends. Even for special occasions such as Mothers day or Fathers Day to spoil that some one special. You can have breakfast in 5 minutes if you are organized to do this all together.
Is eggs toast and bacon a healthy breakfast?
Eggs are high in protein which keep up the energy and help maintain muscle tissue. Bacon can supply the fats you body needs. Whole wheat toast is a healthy filling carb which supplies fiber to the meal.
Is crispy bacon healthier?
The healthiest way to cook bacon is to cook it until crispy but not burned. This will cook of most of the fats, then you place the bacon pieces on a towel or brown paper to drain of the excess fat. Eaten with an egg that normally suits the salty protein.

- whole wheat bread slices

- arugula leaves

How To
Place the slices of whole wheat bread in a toaster. Toast them. This is a quick and easy breakfast that will not take long. Plan everything to simply put together.
Fry the bacon pieces until just done.
Fry the eggs in the bacon fat. Or if preferred in a non stick frying pan.
Place on a serving dish the buttered toast then add the arugula leaves and the bacon on top and then the fried egg. Sprinkle some dried parsley or basil on top with salt and pepper.
Serve for a delicious simple breakfast that many will love. Adding some lemon pepper and salt is an easy way to enjoy this meal for a brunch or any time of the day or week. YummY!

Ingredients
- 2 eggs
- 6 stips of bacon
- 2 slices of whole wheat toast
- bunch of arugula leaves for some greans
- salt and pepper
- herbs of choice such as dried parsly or basil leaves
- lemon pepper.
- asparagus (optional extra)
Instructions
- Toast the whole wheat toast first in a toaster. OR other methods you prefer.
- In a frying pan fry the bacon strips until done.
- Then fry the eggs in the bacon fat until nicely done and still soft. Easy sunny side up. (if you prefer frying your eggs any other way you can do it)
- Butter your toast and add your arugula leaves then the bacon strips over the toast. Add the egg on top, sprinkle some salt and pepper on. Even add some dried parsley or basil on top.
- I prefer just adding lemon pepper and a bit of salt on my egg.
- Serve with cooked asparagus if required. But it is optional.
- Serve this slice of bacon and egg with a cup of homemade coffee or tea for a filling breakfast that will last you all morning.
