Traditional Bobotie and Yellow Rice casserole recipe. Authentic oven baked dish with some warming curry spices, minced meat, apricot jam.

Ingredients

Scale
  1. 450 g (1 pound) minced beef
  2. 1 small onion
  3. 1 tsp of tumeric
  4. 1 dessert spoon of curry powder
  5. 1/4 teaspoon of black pepper
  6. 1 teaspoon of salt
  7. 1 thick slice of bread
  8. 1 tablespoon of vinegar
  9. 1 tablespoon of olive oil
  10. 1 tablespoon of apricot jam
  11. 1 teaspoon of chutney
  12. 23 tablespoons of water
  13. 1 dessert spoon of raisons

TOPPING

  1. 1 egg
  2. salt and pepper
  3. 1/2  cup of milk (125 ml)
  4. Bay leaf

Instructions

  1. Heat up some olive oil and sauté the chopped onions.
  2. Soak the bread in the water.
  3. Soak raison in the vinegar.
  4. Stir in jam spices and seasonings and chutney, simmer for a few minutes.
  5. Add the meat and stir and flatten until all has been minced in well and loose. 
  6. Then add the squeezed out bread and the raisons to the pan mixture. Keep stirring.
  7. Cook until the meat has been browned.
  8. Turn all of this into a greased casserole dish.
  9. Beat together the egg and milk mixture with seasoning and pour over the meat mixture in the casserole dish.
  10. Place the bay leaf on the top, then bake.
  11. Bake for 1 Hour on 180 Deg.C (350 Deg.F)
  12. In the mean time cook your rice but add some turmeric in it to make it yellow.
  13. The casserole should be brown and baked.
  14. Serve with rice and salad and a portion of bobotie.
