Should I soak raisins before adding it to the bead dough?
It is not essential to soak raisins for the bread in the machine. I regular make this loaf and the raisins are soft and tasty. But soaking them before you add them to the dough makes them plumper and more flavorsome. Especially for tea cakes and scones and hot cross buns, as well as pastry.
Is it better to use oil or butter when baking bread?
Because oil is a liquid and at room temperature it will produce moist baked breads. If you use butter that is not melted it should make the baked bread a lot drier.
What milk does to bread?
Milk adds flavor and makes it moister, the fats in the milk enriches the dough and enables the crust to golden brown in color.
