Ingredients

  1. 2 cups of watermelon cubed and pips or seeds removed
  2. 1 cup of feta cheese cubed. (herbed infused cheese optional)
  3. some mint leaves

Instructions

  1. Obtain your skewers or toothpicks, depending on how long you would like to make these watermelon and feta cheese cold snacks.
  2. The watermelon should have been cubed as well as the feta cheeses. To bite size pieces. I would say about an inch in size. 
  3. First add your watermelon cube then your feta cube and again the watermelon cube, continue according to the size or length of the skewers you would like to serve.
  4. With these longer skewers we placed 5 cubes altogether.

Notes

  • Goat Feta Cheese: You can use any feta cheese, plain or spiced with herbs or garlic. Other cheeses to use instead of feta are, mozzarella, blue cheese or halloumi. Even dairy free feta.
  • Glaze or sauces: Use some freshly squeezed lemon or lime juice, with honey and a pinch of salt on top. or make a balsamic vinegar glaze.
